    Liquorice flavours in wine

    Liquorice flavour is extracted from liquorice wood, which contains glycyrrhizine. Depending upon where the grapes grow, the tannin in Merlot, Cabernet Sauvignon and Pinot Noir blends with the tannin in new oak barrels to generate the aroma of liquorice. The heat treatment of oak barrels during the construction can also help.
