    Raspberry Flavours in wine

    The raspberry bush, Rubus idaeus, is a bramble that has been improved by cultivation. Frambinone expresses the aroma in the fruit whereas the aroma in wine is due to alpha-ionone and beat-ionone. Very subtle but straightforward and powerful this is one of the aromas that can be immediately detected and identified. It is a primary aroma occuring naturally in most yonug red wines from different grape varieties.
