Overview
Godfrey Spence tells us about the descriptors for tannins at Level 2 which are simply high, medium or low. At the higher end are extremely mouth-drying wines such as Barolo, Cahors or Argentine Malbec, but at the low end there are wines that give no real drying sensation (Beaujolais for example). We also talk about the length (short, medium or long) and the conclusions or quality which is a scale of faulty - poor - acceptable - good - very good - outstanding.
