Overview
The first wine is the Muscadet Sevre et Maine Sur Lie 2013 - a fresh, clean, crisp and citrusy Muscadet. Pierre Jean tells us how he uses dry ice to protect the grapes and the wine from oxidation during the whole process - from picking the berries to the beginning of the fermentation. The wine is also chaptalised in order to prolong the fermentation and develop more complexity to the wine. We also talk about how the soils affect the taste and aromas of the wine.
