Overview
Chris Myers is export director and Lorenzo Pasquini is the assistant winemaker at Chateau Palmer. We talk about the R&D trials that are run at Chateau Palmer which always have the ultimate aim of making the best possible quality wine. Trials include experiments such as decreasing SO2 amounts, management of oxygen and extraction. Last year, trials into grape pressing were conducted. Lorenzo tells us how these trials compared pressing grapes at different pressures which can then be blended (or discarded) to make the final wine and achieve the best blend. We also talk about experiments with different oak barrels and sulphur dioxide.
