Overview
Pascal Verhaeghe is the président of the UIVC (Union Interprofessionnelle des Vins de Cahors). With his brother Jean-Marc he owns Chateau du Cèdre, widely regarded as one of Cahors' leading estates.
In this second interview with Pascal we hear how he has been reducing the levels of sulphur in his Cahors wines with the aim of eventually being sulphur free. He is doing this in two ways - making traditional wines with just a few sulphites added before bottling for stability but also making the same cuvee without any sulphites at all, with a shorter maturation period before bottling.
