Overview
Emma Rice of Hattingley Valley Wines tells us how the wine lab Custom Crush came about. She had worked in California in a wine laboratory and when back in the UK, set up her own lab in Sussex. In 2012 she moved the lab onsite at Hattingley so that she could work both as a consultant for Hattingley and run the lab business. Emma is now full time head winemaker for Hattingley. They offer a quick turnaround and reliable analysis plus feedback as to what the results actually mean and what to do with them. The analysis is particularly useful in sparkling wine making, pre-bottling, to avoid expensive to fix mistakes being made after the wine is bottled. Emma talks about the lab work they carry out throughout the year which is mostly through wet chemistry as opposed to use of high tech equipment.
