Overview
Domaine Olivier Gard is a family run estate based in Nuits Saint-Georges in Burgundy. We speak with Olivier about his vineyards and innovative winemaking techniques.
Olivier Gard has 11 hectares across the appellations of Hautes Cotes de Nuits, Cotes de Beaune and Cotes de Nuits. Olivier studied agriculture and then oenology up to the National Diploma. He bought his first vineyard 15 years ago and qualified 2 years ago. Olivier tells us about wine making techniques for reds and Cremant-de-Bourgogne. Hautes Cotes means higher up and so the harvest is normally 2 weeks later. The soils are less deep versus lower vineyards and the climate is cooler and this combination results in less structured wines and more easy drinking, fruity wines.
