Overview

Claudio Salgado is director of projects and responsible for the food & beverages at the Hyatt in Hong Kong and China. We find out about the part he plays in managing and selecting wines for the hotel chain.

The hotel wine list needs to meet the demands of two types of consumer - at the high end, consumers who are drinking fine wines and new consumers who are drinking wine for the first time. There is a growing interest to learn about wine in the industry and train to become sommeliers. The Hyatt runs WSET (Wine & Spirit Education Trust) courses but the challenge is to find and retain people with international experience and exposure to wine regions.
