Tim Hanni MW claims food and wine matching is all bullsh*t

Tim Hanni MW and sensory wine expert claimed last week that food and wine matching is bullsh*t. His previous books have explored senses and concluded most of what you taste is made up by your brain based on expectations, but he has taken this to the next level by saying 'A perfect wine pairing doesn’t exist. We’re doing a lot of damage the way we’re matching wine and categorising it. We need to start a campaign to stop wine and food pairing as we’ve created a lot of bullsh*t around the idea'.
