London restaurant Silver Lining re-opens as a wine bar focused on Orange wines

The Hackney-based Silver Lining restaurant re-opened its doors to customers on Wednesday this week as an Orange wine bar. Up until now the restaurant has been selling wine for takeaway only.

Orange wine is what you get when you make a white wine in a similar way to a red wine. Normally, in white wine production, the skins are separated before fermentation, while with reds, the juice and skins are separated after fermentation, so the colour, tannins and flavours in the skins can leach into the wine. Orange wines have white grape skins left in contact with the juice. The skins lack the red grapes' pigmentation but tannins and favours are picked up during the skin contact, which also turns the wine a deep orange colour.
