Genetic code for wine yeast discovered
Researchers from the Australian Wine Research Institute have become the first in the world to map the genetic code for wine yeast which means new strains of yeast can be developed without genetic engineering.
A critical element in the winemaking process is the choice of yeast which allows producers to tailor make wines for different market specifications.
This new information about the genetic code will be used to develop new strains to produce different aroma profiles or adjust alcohol levels or produce better flavours.
