China starts to produce ice wine.

China, the 11th largest wine producer in the world, is to start making ice wine. Changyu, the country’s biggest wine producer, is to use the technical expertise of the Canadians to help it build what is expected to be the largest ice-wine estate anywhere. Ice wine is made by picking grapes late in the season when they have frozen, which concentrates the juice. Currently, only Canada, Germany and Austria produce this premium-quality dessert wine because of these strict growing requirements, so supply falls far short of demand. Changyu is hoping that it will be able to double the amount that is made.
