Dermot Sugrue of Wiston Estate on contract winemaking

Dermot Sugrue is winemaker at Wiston Estate Winery. He was formerly winemaker at Nyetimber but moved on to Wiston Estate in 2006 and established a sparkling wine winery there in 2008 with owners Harry and Pip Goring. Dermot tells the story of how he came to set the winery up and what is involved in terms of making sparkling wine. We also hear about the commercial aspects of contract winemaking - the winery makes sparkling wine for other growers on contract, accounting for 80% or production with just 20% from Wiston Estate grapes for its own wines.
