Overview
Murray Barlow from Rustenberg tells us about their wine range and winemaking processes. We talk about the two Chardonnays they produce which are wild fermented in barrels. The Five Soldiers Chardonnay is a single vineyard wine with only 6,000 bottles produced. They use steamed barrels to enable more precise toasting after the staves have been shaped and the barrel formed. Rustenberg's Straw wine is a blend of Viognier and Crouchen Blanc - no botrytis, instead the grapes are dried to raisins and then crushed and fermented. They also produce a Red Muscadel which is a fortified wine using unfermented Muscat grape juice.
