Overview
Peter McCombie MW tells us how he came to the UK to study wine, beginning with his WSET studies and culminating in becoming a Master of Wine, which he completed in two years. Initially (while studying for the MW) he worked for Wine Cellars, a British company importing Italian wines, headed up by three MWs. Wine Cellars was bought by Enotria, a wine distributor, and he then moved on to Bibendum to head up the sales team selling to the premium on-trade before going freelance as a wine consultant to restaurants. Peter tells us about his approach to putting a wine list together - his broad thinking is to make wine accessible to all, keeping the list easy for guests to navigate but with the chance to showcase some interesting and more unusual wines.
