Overview
Caroline Perromat is owner of Le Chateau de Cerons, located in Cerons, a small appellation of 21 hectares, with 10 producers producing sweet wines. The wines are not as sweet as their neighbours, Sauternes, containing around 95g/l residual sugar after fermentation (Sauternes can be 150g/l).
Caroline tells how the region is perfect for producing sweet wines - the Ciron river runs through Cerons, Sauternes and Barsac and creates a micro-climate of misty morning fog combined with warm afternoons and evenings, which help the development of the fungus botrytis, needed for sweet wines.
