Chris looks at the practicalities of food and wine matching in relation to cheese as well as pairing sparkling wine with food and giving general tips on how to match wine with spicy foods and meat dishes.
We often assume red wine is the obvious companion to cheese but different elements of cheese such as salt, umami, acidity have an effect on how all wines taste and often pairs best with white wines and dessert wines.
Chris gives his thoughts on how to match different styles of sparkling wine with food and what wines to serve with spicy foods and meat and fish.
Above all, don't be afraid to experiment with food & wine combinations to discover what tastes best. 10% will be great, 10% you'll want to avoid and 80% will work just fine together.
