Overview
Abbie and Chris discuss the major white wines of Bordeaux
Entre-deux-Mers is predominantly Sauvignon Blanc, an aromatic, early ripening variety with citrus and green fruit flavours and high in acidity. No oak influence.
Across Bordeaux, planted in equal quantities as Sauvignon Blanc, is Semillon which gives wines ageing potential and is late ripening.
In Pessac-Leognan, Graves, Sauvignon Blanc and Semillon are blended with small amounts of Muscadelle. The wines are often barrel fermented and matured in oak before being blended and bottled.
Sauternes wine are Semillon dominated blends with Sauvignon Blanc. The grapes hang longer on the vine than late harvest wines and are botrytised, shrivelling to the size of a sultana and then hand-picked. The botrytis imparts marmalade, ginger, dried apricot aromas.
