Neville Abraham on Hospitality Training Part 1

Overview

Neville Abraham is a renowned restaurateur who has been in the hospitality trade since the 1970s. He founded the Amis du Vin Group and headed up the Groupe Chez Gerard chain of restaurants. Along with Laurence Isaacson he set up Cafe des Amis du Vin in Covent Garden in 1980, the first French restaurant, he believes. He was also on the board of wine merchant Liberty Wines for almost 20 years until 2022.

He says London is a melting pot in terms of the world cuisines you can find here and has a vibrant restaurant scene but the industry has been hit hard by Brexit, Covid and inflation in food and wine prices. The pathways for a career in hospitality are not well defined and, in the UK, perhaps not so well regarded.

Hospitality roles in hotels are more structured than in the restaurants and bars: in the past hotels would run restaurants but these days the tables are turning and restaurateurs are running the restaurant themselves, not the hoteliers. The training and development of people is being driven by some of the big names, such as Gordon Ramsey who take training seriously. Westminster Kingsway College is providing hotel management schemes, chef development courses and a new Level 4 food and beverage course that Neville is involved in. Rather than product knowledge (that you get with WSET) this new course will look more at the service of food and wine, including how to store wine, serve wine and fundamentals such as how to write a wine list.
