Overview

Sam Harrison is an independent restaurant owner with brasseries & cafes in West London, with six sites and growing.

In this second interview, we talk to Sam about staff training, the skills and roles in a restaurant, and how he uses courses to develop his staff using both external providers and in-house training. One hospitality training course he sites is the 'good to great' course from Stephen Waters at Watershed Training who focuses on training for smaller independent businesses. Other courses might include finance or business skills or a course that allows a member of staff to develop a particular skill secondary to their main role.

We also discuss pay packages and career progression opportunities in the restaurant trade.
