Overview

Tim Hanni MW has a unique perspective on the world of food and wine matching that challenges traditional concepts. In this first of three interviews we find out how different types of tasters perceive wine.

Tim's radical approach to food & wine matching takes account of the fact that human beings have different levels of sensitivity to certain flavours found in food and wine. At the extremes there are hyper sensitive tasters and tolerant tasters and their perception of how wine tastes will be very different due to the sensitivity of their tastebuds. Tim explains in more depth how this relates to food and wine matching and why traditional schools of thought are indeed invalid.
