Overview
Dr Claus Patz is a food scientist at the Geisenheim Grape Breeding Institute. In this interview he explains how wines are analysed to measure the density of wine, the sugar, acidity, acids and alcohol, among others. The wines are measured throughout the process, pre and post fermentation, and sometimes these measurements are used for making declarations on German wine labels. We hear about the various techniques and tests used in the analysis.
