Overview
We talk about viticulture and winemaking processes with Pierre Jean of Chateau du Cleray. As the region is fairly close to the Atlantic ocean the humidity can cause diseases such as botrytis and mildew, but mildew is the greatest problem due to damage to leaves which results in less sugar in the wine. 'Sur Lie' is the process used in the Muscadet Sevre et Maine appellation of keeping the wine on the lees (dead yeast) from the end of fermentation at the beginning to mid October to the 1st March. Pierre Jean describes the whole process and we also touch on the process of malolactic fermentation.
