Overview

Nathalie and Gilles Fevre are the owners of Domaine Fevre in Chablis. We find out about the region and wines of this famous French appellation.

The 4 levels of the Chablis appellation are described, they are Petit Chablis, Chablis, Premier Cru and Grand Cru. The soils make unique wines, different to other Chardonnays from around the world. Kimmeridgian clay or limestone soils are typical of the region. There are 72 different Premier Cru vineyards but only 15 in the market and 7 different Grand Cru vineyards. Before 2004 the grapes of Domaine Fevre went to the co-operative but since then they have established their own winery. The Fevres have Premier Cru, Grand Cru and Chablis vineyards and produce 5 different wines.
